Potato Pizza
Preparation Time: 40 minServes 4
1 kg (2 lb) large brushed potatoes, peeled
2 cloves garlic, crushed
1/4 cup (60 g/2 oz) tomato paste
2 tablespoons bottled tomato pasta sauce
1 small chilli, finely chopped
2 tablespoons finely chipped parsley
150 g (5 pz) cheddar cheese
4 slices salami, cut in thin stips
3 roma tomatoes, roughly chopped
120 g (4 oz) mushrooms, slices
1 red capsicum, thinly sliced
1 small onion, thinly sliced oregano leaves
1.) Preheat the oven to moderately hot 400 F degrees. Lightly brush a pizza tray with melted butter or oil. Cut the potatoes into thin slices and lay the sliver overlapping, on the prepared tray. Ensure the potato slices completely cover the tray ad there are no gaps. Combine a little olive oil and 1 clove of the crushed garlic and brush over the potato slices. Bake for 30 minutes. Remove, brush again with the remaining oil and garlic mixture and bake for another 15 minutes.
2.) Combine the tomato paste, tomato pasta sauce, chilli, parsley, remaining crushed garlic and some salt and pepper in a bowl; mix well. Carefully spread this mixture over the cooked potato slices avoiding moving any og the potato slices. Sprinkle a third of the grated cheese on top.
3.) Scatter half the salami, tomato, mushroom slices, capsicum and onion over the top, with another third of the cheese. Repeat again with remaining ingredients. Sprinkle the remaining cheese, some cracked pepper and the fresh oregano leaves over the top. Bake for 20 minutes or until cheese has melted.
